Today is Valentine’s Day – a day historically known for love, romance, roses, and chocolate!

Having just completed a sugar detox as part of The RESTART Program, and LOVING the results, my husband and I decided to stay on a modified version of the program and avoid sugars.  But what do you do when a holiday celebrated by bringing your love sugary treats comes around?  Try these chocolate bites!

Using a modified version of Lori McClurg’s Chocolate Berry Bites, I made three versions of a Chocolate Bite and was quite pleased with the results – and so was my love!

Chocolate Bites

Makes 36

Ingredients:

1/2 cup pastured butter

1/2 cup coconut oil

1 cup almond butter

3/4 cup cacao powder

1 tsp vanilla

Basic Directions:

Over a double boiler, melt all the ingredients together and mix well.

Using a lined mini-muffin pan, place a tsp of the melted chocolate mixture in the bottom of each liner.

Next comes the fun part, playing with flavors!

Flavor Combinations
Coconut Chocolate Bite

Sprinkle unsweetened flaked coconut on top of the melted chocolate mixture in each cup, add another teaspoon or so of melted chocolate mixture, and top with more unsweetened flaked coconut.

Chocolate Almond Butter Cup

Place 1/4 tsp – 1/2 tsp of almond butter on top of the melted chocolate mixture in each cup and top with another tsp of melted chocolate mixture.  Garnish with slivered almonds.

Chocolate Raspberry Bite

Place a raspberry on top of the melted chocolate mixture in each cup and top with another tsp or so of melted chocolate mixture.

Finishing Up

Place the freezer for about 15 minutes and store in the refrigerator.

Enjoy!  Without the guilt, without the sugar, with or without your love.  😉
